The Schools of Nursing and Pharmacy operate on both the Oxford and Jackson campuses. The Schools of Dentistry, Health Related Professionals and Medicine, and the Health Sciences Graduate School, are based in Jackson only. (Additional healthcare programs are available through the School of Applied Sciences on the Oxford campus.) Other than these exceptions, the schools above are on the Oxford campus.

Brief Bio

Mary G. Roseman is a Registered Dietitian, Professor, and Hospitality Management Program Director in the Department of Nutrition and Hospitality Management. Previously, she held faculty appointments at the University of Kentucky and University of Central Oklahoma. She received her PhD in Foodservice Systems Management from Oklahoma State University, a MBA from University of Central Oklahoma, and BS in Food and Nutrition from Western Kentucky University. Dr. Roseman teaches in both dietetics and hospitality management at the undergraduate- and graduate- level. Her areas of teaching expertise are foodservice management, human resources, marketing, strategic management, and research methods. Dr. Roseman has published articles in numerous dietetics/nutrition and hospitality peer- reviewed journals in the areas of: 1) school nutrition programs, 2) healthy menus in schools, 3) dietary behaviors of adolescents, 4) soft drink behaviors and parental limits on soft drinks of adolescents, 5) quick service restaurants and healthy menus, 6) BMI and diet perceptions of families receiving food assistance, 7) restaurant menu labeling, and 8) food in adolescent TV programming. In addition to her academic career, Dr. Roseman spent almost 20 years in industry. At Long John Silver's International Headquarters, she held such positions as Senior Director of Brand Marketing, Director of New Product and Business Development Marketing, and Director of Nutrition, Public Relations and Consumer Information. She began her professional career as Assistant Director of Food Services at the University of Central Oklahoma.
