About Lenoir Dining
Lenoir Dining is an educational operation within the Department of Nutrition and Hospitality Management. Housed in Lenoir Hall, this non-profit 40-seat teaching laboratory offers students hands-on experiences in all facets of restaurant operations.
Throughout the semester each student will rotate through various positions within the operation; ranging across service, cooking, and management functions. Each table has evaluation cards that allow customers to provide helpful feedback to help students improve their skills and increase their knowledge of the food service industry.

How Can I Eat at Lenoir Dining?
Confirmations will be made the day of your reservation.
Payment is taken in the form of cash and credit card (MasterCard or Visa), or Interdepartmental Sale (checks, Flex, nor Express will be accepted).
For Daily Parking Passes, please make inquires at parking@olemiss.edu.
The menu changes weekly at Lenoir Dining in an effort to expose our students to new food ideas and concepts as well as to allow them to express their creativity through food.
Each meal consists of:
- A choice of drink (coffee, tea, water, etc)
- Freshly made bread-of-the-day served with spread
- Soup or Salad
- Entrée and accompanying side items
- Dessert
Who Works at Lenoir Dining?
Lenoir Dining is entirely run by students enrolled in NHM 462/472, Quantity Food Production and Service (with lab). The course covers principles and fundamentals of quantity food production and service in commercial and institutional operations including:
- Menu planning
- Recipe standardization
- Human resource utilization
- Food safety
- Culinary skills
- Hazard analysis of critical control points, and
- Costing
