Biography

Dr. Laurel Lambert, an Associate Professor at the University of Mississippi, is a registered dietitian nutritionist and a child nutrition and food systems management specialist with a culinary science background. She centers her research on child nutrition programs and policies. Dr. Lambert has also been notably teaching study abroad courses in Italy since 2013 and collaborates with Italian researchers for gastronomic studies, providing her unique insights into Italian food culture.

Food preparation is a delicate balance between art and science. Food Preparation: A Laboratory Manual, helps students learn about food preparation through unique techniques, demonstrations,  and hands-on practice. This deeply researched book includes, background information, laboratory activities, one-of-a-kind recipes, and innovative food preparation methods. 

Readers will also enjoy a wide range of illustrations detailing cooking equipment, photos of prepared dishes, and measuring equivalents and symbols.
