Brief Bio
Laurel Lambert is a registered/licensed dietitian and Associate Professor of Dietetics and Nutrition in the Nutrition & Hospitality Management Department. Dr. Lambert received her undergraduate dietetics degree at the Eastern Michigan University and her masters and PhD in Food and Nutrition at the University of Southern Mississippi in 2000. Upon graduation she served as assistant professor at the University of Idaho in Moscow, Idaho, before taking the position at the University of Mississippi.Dr. Lambert worked for 11 years in healthcare as a dietitian and Food Service Director. Since 1997 she has conducted research primarily in child nutrition programs investigating school meal operations and more recently the incorporation of school wellness policies.
